Bon Appétit’s Produce Commitment

In 1999, Bon Appétit Management Company established a company-wide initiative to buy as much product as possible from within a 150-mile radius of each restaurant. Our “Farm to Fork” program is about investing in the health of our communities and the future of our food supply. Our first choice is to purchase seasonal and regional ingredients that are produced organically. This produce is often prepared and served within 48 hours of harvest.  Also, if the choice is between local non-organic produce and organic produce shipped from overseas, we support local because we believe it’s more sustainable. We also support farmers who are preserving the diversity of our food choices by planting heirloom varietals.  
 
Bon Appétit now spends over $55 million per year with small local farmers and artisans.  Buying 100% locally is not yet practical but the commitment we have made to Farm to Fork is to help ensure that our community can eat well today and tomorrow.
